Delicious Buttery Pecan Protein Cookies Recipe
Mouth watering, delicious buttery Pecan Protein Cookies! They're buttery, nutty and oh-so-scrumptious! This recipe uses almond flour, but step outside your baking box and try variations. Now stop drooling, and get to baking! This recipe also uses Life's Abundance Plant Protein Powder in Vanilla. Feel chocolatey instead? Substitute the Life's Abundance Plant Protein in Chocolate! These plant protein powders are so versatile. Great in smoothies, great in baking and even as a mix-in to your yogurt.
INGREDIENTS:
3 scoops Life’s Abundance Plant Protein
1 c almond flour, quinoa flour or flour of choice
1/3 c chopped pecans
1/4 c honey
1-1/2 Tbsp. coconut oil
1 Tbsp. butter, melted and cooled slightly
1 tsp. baking soda
1/4 cup milk
DIRECTIONS:

Preheat oven to 350 degrees F. Lightly coat a baking sheet with non-stick cooking spray.

In a large bowl, combine all ingredients and stir until a cookie-dough-like consistency forms. Add more milk by the tablespoon if needed.

Roll dough into small balls, place on prepared baking sheet and flatten into cookies.

Bake 10-12 minutes, or until edges start to turn golden.
This recipe yields approximately 12-15 cookies, so think about doubling ingredients for a bigger batch of home-cooked goodness!
